I am a sucker for a great pancake though, which was a staple that my sister and I would make as kids, when we could carry the 13″ tv in from the living room into the kitchen and watch cartoons while making pancakes, which was such a treat. I’d love to see a great muffin recipe in here that packs some serious nutrition without a whole lot of sugar, something satiating and will carry me to, if not through, lunch!
