To continue with the whole grain baking fun, this week we’re giving away an awesome bread pan from King Arthur Flour, plus a coupon for a free 5 lb. bag of flour.

    I would recommend white whole wheat flour as it gives the finished product a more delicate flavor. I only bake with white whole wheat flour — it works great for cookies and even cakes! :)

    I could give up bread; seriously I could, if it weren’t for my obsession, OBSESSION, with Italian bread. Not the sad, spongy supermarket variety, but the authentic, chewy with a crust that bites back Italian bread the likes only found in Italian neighborhoods all over the country (NYC is where I get mine). This is my go-to food, my comfort, my joy, my reason for living some days. Without it the world is a whole lot paler and the ‘why bother’ a whole lot stronger. I’ve never tried baking it, might try someday, but a slice slathered wuth soft salty butter is MANNA FROM HEAVEN!

    I have made many, many, many rye breads –
    sandwich, boule, rolls, braids, fougasse, kaiser, bread sticks…so many variations.
    I always try to find a new reinterpretation.

    My family’s and my favorite yeast bread to make is cinnamon swirl bread. Recently I have made it more healthy by substituting King Arthur White Whole Wheat flour for one- third of the unbleached flour in the recipe. The loaf is tender and slightly sweet, and if there’s any left the second day, we toast it for a scrumptious treat!

    The standard method of keeping a cup or so on hand leads to a lot of waste and an unhealthy starter. I save a teaspoon in the refrigerator between uses. I build it up over a couple of days before I plan to use it (doubling three times every 12 hours, and using it 4-6 hours after the final feeding). I also dry out some active starter and keep it in the freezer in case something happens to my starter — such as the jar falling into a sink of soapy water. Not that I’ve ever done that… :-)

    I make sourdough weekly, so I’ve got the prep down to a science. :-)

    My mom makes the best pinwheel bread. You make half a batch of white bread, half a batch of whole wheat. Then roll them each out, put one on top of the other and roll it up. SO GOOD!!
