A couple of months ago Ben and I enjoyed a wonderful vacation in Vermont and you heard all about it here on the blog.  I’m still thinking about all the fun we had, the amazing food we ate, and of course, the awesome cheese from Grafton Village Cheese Co.  I’m excited to share my love of cheese with one lucky reader, so I’m giving away this Vermont Comfort Crate gift basket.  It contains 7 oz wedges of Tavern Select 3 Year aged, 4 Year aged and Maple Smoked cheddars, a jar of Side Hill blackberry jam, Effie’s Oatcakes and a Grafton Village wire cheese slicer in a Vermont wooden reusable crate.

    I love cheese so much I often just snack on it right out of the fridge, but my fiance is getting me a fondue pot for Christmas, so I would love to try some of these cheeses as a fondue!! Yummy!

    since it’s just my husband and me at home, we’ll probably start by eating it straight up with crackers and fruit, then incorporate it into my cooking like omelets, grilled cheese, even mac and cheese, etc. I like to cook small portions so a little bit will go a long way for us!

    Definitely having third trimester cheese cravings!! I would eat it straight (of course), make quiches to freeze for the early days after birth, adapt your cherry tomato/gruyere biscuit dish (which is amazing) to vegetables in season now and also possibly freeze some, and use the crate to store baby socks. Fingers crossed big time!

    I would probably try a new updated mac and cheese with a combination of the white cheeses and fresh bread crumbs for toppings. Then I would use some of the cheeses just plain on a tray with pear slices, toasted pecans, some crusty bread, and a bottle of good white wine for a fire-side winter evening treat! (Assuming it ever gets cold enough here in Georgia to light a fire – it’s 70 and muggy/stormy today)

    Eating the cheese, jam and oatcakes together is always good but I think I would try this cheese in a potatoe soup. There is a restaurant near by that has the best potatoe cheese soup that I have been wanting to mimic :-)

    OMG Vermont Cheddar–there is nothing better! I think I would make apple scones and serve the cheddar on the side, or even a nice apple crisp. Apples paired with sharp cheddar make both ingredients taste their best. To be shared with a neighbor who is getting chemo for her third Cancer attack. (She loves my scones, they make her smile.) I would serve the oatcakes slathered with the jam to my partner who loves blackberries in any form–maybe save until Valentine’s day as he is still eating the blackberry truffles I just made as a Christmas treat.
