In my mind, summer cocktails should be three things: light, refreshing and not overly boozy. Gin is my spirit of choice these days, and it lays the perfect foundation for a fresh summery drink. Here fresh peaches and lavender are muddled together with gin and simple syrup, mixed with some freshly squeezed lemon juice and topped off with a splash of sparkling water.

These are super simple and ideal for warm weather sipping. To play around with the flavor balance, try adding some peach slices to the pan while you make your simple syrup for an extra dose of peach flavor. Alternatively, make a lavender syrup to up the herbal notes in the drink. Whatever floats your boat. Let’s share another round, shall we? Cheers!

Ingredients

  • 1 small or ½ large fresh ripe peach, sliced, plus more for garnish
  • 2-3 sprigs fresh lavender, plus more for garnish
  • 3 oz. gin (I like Bluecoat)
  • 3 oz. simple syrup
  • 2½ oz. fresh lemon juice
  • Crushed ice
  • Sparkling water

    Annie, how do you make simple syrup? I have seen it for sale, but it sounds like you made yours. Thanks!

    Oh, definitely no need to buy simple syrup. It couldn’t be easier to make! Simply combine equal parts sugar and water in a small saucepan and then heat until the sugar is fully dissolved. That’s it. You can infuse with various flavorings (for example, adding a vanilla pod to make vanilla syrup) as you like. It is ideal for sweetening any drink. I use it all the time to sweeten my iced coffee (http://www.annies-eats.com/2011/08/15/diy-flavored-syrups/) and for all sorts of cocktails. Enjoy!
