Garlic Rosemary White Bean Dip Cooking View

Here we are, many of us in the final days of holiday preparations. With mile-long to-do lists, lack of sleep (just me?) and a general sense of frenzy, having a healthy balanced diet may have dropped lower on your list of priorities. It is especially easy to simply grab something from the packages of cookies and sweets that seem to be everywhere you turn. This garlic rosemary white bean dip is one of my absolute favorite options for healthy snacking. It is packed full of flavor, takes just a few minutes to make and with only a handful of ingredients, its simplicity is everything.

Keep this around along with an assortment of fresh veggies and you’ll be far less likely to reach for cookies or candy. This would be a great thing to bring to any holiday gathering as well to bring some balance to the inevitable sugar overload. My family eats this like it’s going out of style and once you try it, you’ll understand why!

Garlic Rosemary White Bean Dip
Yield: about 2-3 cups

Ingredients

  • 4 cloves garlic
  • 2 tbsp. fresh rosemary leaves
  • ½ tsp. kosher salt
  • 3 cups cooked cannellini beans (or 2 15 oz. cans, rinsed and drained)
  • 2 tbsp. water
  • 5-6 tbsp. extra virgin olive oil
  • Freshly ground pepper

Directions

  • In the bowl of a food processor, combine the garlic and rosemary leaves. Pulse until finely minced. Add in the salt, beans and water, and pulse briefly again, scraping down the sides, until the mixture is coarsely pureed. With the food processor running, add the olive oil through the feed tube. Once incorporated, scrape down the sides of the bowl, process 2-3 minutes longer until the dip is fluffy and smooth. Season to taste with freshly ground pepper and additional salt, if needed. Serve.

    It’s watermelon radish. I usually just taste a green bean and if it seems too tough, I’ll blanch them first. I didn’t blanch these because they didn’t need it.

    This dip is fabulous! It was a hit on Christmas Day, and I just made it again. Does it freeze well? I probably should have cut the recipe in half today, and so I’d like to freeze half for another weekend. Thanks!

    I’ve never tried freezing it so I can’t say for sure. Come to think of it, I’ve never frozen any similar bean dip. If you do, let me know how it goes.
