Pineapple Mojitos Cooking View

When it comes to my beverage of choice while out and about, I’m a cocktail girl.  I love seeing the various concoctions that each restaurant and bar has created and trying new things.  Up until this point in my life, I have entirely avoided mojitos because of my well documented dislike for mint.  Such a shame, since I know so many of my friends really love mojitos.

Recently, however, I’ve had a few sips when out with friends who offered a taste and finally it all makes sense.  The natural flavor of fresh mint is fine – nice, even.  So completely different from the artificial “mint” flavor that my tastebuds find so offensive.  I decided to try making them at home and the moment I saw this pineapple version, I was sold.  I love a good pineapple cocktail and these did not disappoint!  What’s your favorite kind of mojito?  I’m looking forward to playing around with more variations!

Pineapple Mojitos
Yield: 1 serving

Ingredients

12 fresh mint leaves
2 oz. (¼ cup) fresh pineapple chunks
Crushed ice
1 oz. (2 tbsp.) freshly squeezed lime juice
½ oz. (1 tbsp.) simple syrup
2 oz. (¼ cup) coconut rum
½ oz. (1 tbsp.) Grand Marnier
3 oz. (6 tbsp.) ginger ale

Directions

  • Add the mint leaves and pineapple chunks to a glass, and muddle together.  Add some crushed ice to the glass.  Add in the lime juice, simple syrup, rum, Grand Marnier, and ginger ale.  Stir until well mixed.  Taste and adjust flavoring as necessary.

    Ooooooo…mojitos are my favorite cocktail. I have tried a mango version and a strawberry version. I have not tried a pineapple mojito yet and I LOVE pineapple. Can’t wait! Too bad it is only 8am. Thanks for sharing.

    Annie, the aversion to mint is another thing we have in common! ;-) I’ve grown to appreciate mojitos, though it’s not the first cocktail I think to order. I’ve had made two great mojito recipes from http://www.creativeculinary.com (Blueberry Mojito and Raspberry Vodka Mojito). They just scream summer!

    I am definitely a mojito gal. There is a place in mt. pleasant called The Red Drum Gastropub that has the best mojito in the charleston area. They even won a local mixed drink competition for it. Side note, I would have loved to have been a taste tester in that competition! Anyway, their mojitos, food’ and dessert (no words) are incredible!
    I’ll have to give this recipe a whirl when my mother in law visits! She loves theses flavors.

    Mojitos are the best!! I’m so glad you’ve come around. Mango and ginger mojitos are two current favorites of mine, but pineapple is high on my list to try!

    While in Paris, my boyfriend and I used to stop at a cafe on the boulevard St. Germaine in the late afternoon. I always had a glass of wine or a mojito royale…because adding champagne to anything is always a good idea. Mojitos always remind me of that now.

    Um, why am I not drinking this right now?! And I totally agree that fresh mint is infinitely better than artificial. I have the same hatred for fake cinnamon as you do fake mint. Blech.

    I love a cucumber mojito … I think they’re technically a drink unto themselves, but a bar in Richmond makes them and they are FABULOUS!!! They’re the epitome of a summer cocktail, and I hardly ever stray from a glass of red!

    There’s a restaurant in DC called Cuba Libre that specializes in mojitos. My favorite is the grilled pineapple mojito. Highly recommend grilling your pineapple next time for a great little extra oomph of flavor!!
