Jalapeño Cheddar Chicken Burgers with Guacamole Cooking View

Guys.  Please, stop what you are doing and go put these burgers on your menu.  Okay, I’m not trying to be bossy.  Well, that’s a lie.  I’m kind of bossy by nature – but really, I’m trying to do you a favor.  You see, I love every single recipe I share in this space.  If I don’t love it, I don’t share it.  Sometimes, though, a meal stands out from the rest.  This, my friends, is a perfect summertime meal in my book and it deserves a little extra touting.

It utilizes the grill which is great because I always try to make the most out of grilling season while it is here.  It’s a very easy dish – still just a burger at heart, but a few simple additions take it to a new level and make it seem a little bit fancy pants.  Oh, and one of those things is guacamole, so that guarantees awesomeness right?  I can’t wait to make this again and I know we’ll be enjoying it many more times in the coming months.  Any friends reading this that want to come over for dinner soon, this is probably what we’ll be having :)

Jalapeño Cheddar Chicken Burgers with Guacamole
Yield: 4-5 servings

Ingredients

Oil (for oiling grill grates)

For the burgers: 
1½ lbs. ground chicken
½ cup yellow onion, diced small
1/3 cup minced fresh cilantro
2 cloves garlic, minced or pressed
1 jalapeño, seeded, cored and minced
1 tsp. ground cumin
1 tsp. paprika
Juice of ½ lime
1/3 cup shredded cheddar cheese, plus more for topping
½ tsp. kosher salt
½ tsp. pepper

To serve: 
Burger buns*
Guacamole
Salsa (optional)
Minced fresh cilantro

Directions

  • Heat a grill to medium-high heat.  Oil the grates to prevent the burgers from sticking.  To make the burgers, combine all ingredients in a large bowl and mix lightly, just until evenly combined.  Form the mixture into 4-5 patties.

  • Cook the patties on the heated grill, about 3-4 minutes per side, flipping once.  A few minutes before the burgers are finished cooking, top with sliced or shredded cheddar cheese (if desired).  Cook until an instant-read thermometer inserted in the center registers 160˚ F.  Remove the burgers to a plate and let rest a few minutes before serving.  Assemble with burger buns, guacamole, salsa, and/or minced fresh cilantro as desired.

  • *If you are making fancy pants burgers (or any burger at home, really), they are deserving of a good bun.  The best buns, in fact, are the ones you can bake at home.  It makes such a difference, not to mention they freeze fantastically so you can make a double batch and stock up!

    Well, since it’s just a burger with guac on you can of course leave it off. I’m sure you can play around with other topping options, though to me the combination here is what makes it so awesome. But no doubt they would be awesome with salsa, etc. I have seen other people add Ranch dressing to these which sounds like a fab idea. You could try the homemade ranch recipe for that – it is soooo good!

    Oh yeah, they devoured them! These aren’t really spicy at all but even if they were, we’d still feed them to our kids. They don’t mind spice.

    Ah. Well it’s a fabulous photo nonetheless. :) I had a telephoto lens back in Oslo, but our apartment was so small I could hardly get far enough from the food to actually take a photo. Haha.

    Yeah, lenses like that are hard to work with! Thankfully with this one, the ability to go down to 24 mm means I can be really close to things if I want, which definitely makes for easier overhead shots for this shorty :) I just haven’t gotten to play around with that much yet. But Alex and Sonja use theirs for food a lot, I believe.

    I may be overselling these, but I just had to come back and comment on how wonderful these burgers are and how they got me through our recent heat wave. When you originally posted the Jalapeño Cheddar Chicken Burgers, I was going shopping that day anyway, so grabbed the ingredients needed and made them the next day. Since I live alone, and it makes 4 -5 patties, I cooked all of them and then wrapped and froze the extra. Sooooo glad that I did that in advance, with Annie’s comments about freezing things and being organized, I wrapped each and labelled them accordingly.

    Then we got our heat wave here in Ontario, Canada (which I think was in almost every State as well in the US just recently). Well, without air-conditioning, you can just imagine how I didn’t feel much like cooking, but then I remembered these incredible burgers – and they saved me! Again, not trying to be overdramatic, but so thankful for your recipe!!!! They were so quick and easy to thaw and reheat quickly, that it was perfect. The lime and cilantro in these make them taste light and refreshing – just what you want on a hot summer day.

    These were fantastic! I’ve been on a new-recipe trying kick the last couple weeks and this was one of them. So good. I live in Southern Utah so we can use the grill year round pretty much. We had them with guacamole, pico de gallo, and a little drizzle of lime cilantro dressing. I used turkey because that’s what I had, but they were so good! Thanks for another great recipe!
