Black Bean, Corn and Avocado Salad Cooking View
Annie's Original

So, remember a couple of years ago when, much to our collective dismay, Charlie Sheen was in the news almost daily for his latest shenanigans?  And no matter how much you wanted to get away from it, he seemed basically unavoidable?  No doubt you recall that he gave new meaning to the word “WINNING”, which has since become a seriously overused hashtag.  Well, I have to admit that for the few days we ate this salad, each and every time I would think, “Winning!”  (or maybe #winning…)

Why?  First, it takes about 10 minutes to throw together.  It’s healthy, not to mention naturally gluten free and vegan (in case that’s a concern for you.)  My favorite thing about it though, is its versatility.  Eat it simply on its own as a salad, scoop it up with tortilla chips, put it between tortillas and call it veggie tacos, or use it to top grilled chicken or steak.  With so many options and all of them totally delicious…yeah, this stuff wins at life.

Black Bean, Corn and Avocado Salad
Yield: about 8 servings

Ingredients

  • 1½ cups (1 15 oz. can, drained) black beans
  • 1 small red onion, diced
  • 2 avocados, pitted and cubed
  • 2 cups fresh corn kernels (from about 3 cobs)
  • 1 pint cherry or grape tomatoes, halved or quartered
  • Juice of 2 limes
  • 2 tsp. olive oil
  • ¾-1 tsp. kosher salt
  • ½ cup fresh cilantro, chopped

My kind of salad!! LOVE every single ingredient in this salad so much. I have to make it is soon!

  • Caroline L.

Ha, the Charlie Sheen days… I think this is a much better example of #winning than whatever he was coming up with in those days!

I love, love, love the versatility of this dish. I make a similar version all the time, incorporating whatever I have around (red pepper is a great addition). It’s perfect as a dip or topping or….sometimes just on a spoon. Yours is beautiful!

I remember those Charlie Sheen days. I’m sure I said “winning!” after every sentence.

But really, this salad sure looks like a winner on my end! :)

I saw this recipe on pinterest last year (not yours, obv) and we made it constantly last summer. It is SO GOOD!!!! The boys love it too!

What a perfect summer recipe! I’m especially loving things that don’t require me to turn my oven on in this heat. I think I might even have everything to make this in my kitchen right now :)

I make this pretty much identically all of the time except I add just a dash of cumin, a jalapeno, and a splash of red wine vinegar. It’s great in all of the ways you mentioned! So easy, I bring it to parties all throughout summer!

This looks really yummy and fresh :)

This sounds wonderful, but I have a question: is this made with RAW corn? I actually read the recipe 3 times to see if missed something but I can’t imagine eating raw corn.

  • Kim Mingledorff Stebbins

Ok, I can see eating it raw– but only fresh- picked, not corn that’s been sitting around at the grocers for who bows how long! I’m going to make this to serve with grilled salmon– but I might just grill the corn too!

Simple salads like this never tire in our house. This looks lovely Annie!

  • annieseats

Raw corn is great, I use it frequently.

I love using fresh summer corn like this. So good! Perfect for a day you don’t want to cook with heat.

We had this for dinner tonight- so refreshing and delicious! You are “winning” for coming up with this awesomeness!
P.S. Loving all the Annie’s Originals lately. Just another reason to love your blog!

Making this today as part of our 4th of July feast! Thanks for posting! Have a wonderful holiday!

This salad is so good and refreshing! I made it the other night to take out on our boat with friends. I added some other goodies from my garden, like yellow squash and peas!

  • Kate Lovett

This is a summer standby in my house! I love it as written or with the addition of a diced mago. Summer perfection!

  • Kathleen

We made this for dinner last week – fabulous! Will definitely add this to our dinner rotation. Love how it is so simple and fresh. Another great recipe, Annie!

  • Emily

I made this for dinner last night and all I kept thinking was “this is going to be the best for lunch again tomorrow!” After adding some to my boyfriends scrambled eggs this morning (talk about starting a monday off the right way?) and eating more than my fair share over a salad for lunch, I’m happy to report that we will be making another batch for dinner tonight. We’ve found our go-to summer recipe! Thanks for posting!

  • AwesomeSibe

This is so addicting, so easy to make and tasty. I think I make thin at least once a week. I love it.

  • Irini

I made this today but added lettuce and it was great! Thank you!

  • Alyssa D

So happy summer produce is starting to appear and I am able to make this again! I made this countless times last summer and anytime I share it with someone else they too get addicted. I’ve served it as a app with chips, eaten it with a fork for dinner by myself, served it with your tequila lime chicken and rice for a more hearty dinner and thrown it in burrito with scrambled eggs for breakfast. Thank you for bringing this into my life!

  • annieseats

I’m so glad to hear it! I feel exactly the same way about it as you do :)
