Breakfast Tacos Cooking View

In Indy there is a restaurant called The Tamale Place.  While I’ve never actually eaten inside it, I have been lucky enough to enjoy their cooking on several occasions.  We residents take turn bringing in breakfast on Friday mornings, and my friend Adam was the first person to introduce me to this little gem of our city by bringing it one Friday.   His Thursday afternoon email had me feeling a tad skeptical…”Breakfast tacos?  What are those?  Do I really want to eat a taco for breakfast?”  When I tried it the next day, it honestly blew me away.  The concept is fairly simple – a fresh tortilla, melted cheese and scrambled eggs topped with some salsa.  They also have varieties including steak or chorizo mixed in.  As good as all of that sounds on its own, the whole is way greater than the sum of its parts.  At first I thought it may have simply been the uniqueness of it, the sheer joy of something breaking the routine of bagels, muffins, etc.  The change of routine is certainly welcome but in the end, it is the dish itself that deserves the praise.

Despite my extreme excitement each time the tacos are brought into work, I never considered the idea that I could replicate this favorite restaurant dish at home.  When I saw my friend Jenny post this version, I jumped for joy.  I could tell it would be very similar, and it hit the nail on the head.  Unfortunately my grocery store was all out of any type of cheese that was even remotely close to what the recipe called for, so I just bought something vaguely similar.  Good news – most cheeses will work.  Normally my favorite type of taco from The Tamale Place is the kind with chorizo but at home I opted for a meat-free version.  These were so good, I know for sure what I’ll be doing with the chorizo sitting in my freezer right now.  I can’t wait to make these again and if you’ve never had a breakfast taco before, I recommend you change that at your earliest convenience.

Breakfast Tacos
Yield: about 2 servings

Ingredients

½ tbsp. unsalted butter
¼ cup chopped onion
3-4 large eggs
Splash of milk
Salt and pepper
2 8-inch tortillas
6 tbsp. crumbled Mexican cheese such as cotija
¼ cup chopped cilantro
Salsa, for serving
Sliced avocado, for serving

Directions

  • In a non-stick skillet, melt the butter over medium-high heat.  Add the onion and cook until slightly softened, about 3 minutes.  In a bowl, lightly beat the eggs with a fork and stir in a splash of milk.  Add the eggs to the pan with the onion and scramble, stirring occasionally, until cooked through.  Season with salt and pepper to taste.

  • Warm the tortillas for about 20 seconds in the microwave.  Top each tortilla with half of the cheese.  Divide the eggs between the tortillas and layer over the cheese.  Top with the cilantro, salsa, and avocado as desired.  Fold up the tortillas and serve immediately.

    Where I live, there are a lot of breakfast burritos (also known as huevo rancheros). I can personally attest to the fact that these are also fantastic with refried beans, rice, guacamole, and pretty much anything else that you would put in a burrito!

    p.s. i’ve even seen people make them with kraft cheese slices and regular breakfast sausage, and they were still delicious!

    Another Tex gal… Very common breakfast food down here. My fav is with eggs and potatoes (hashbrowns). It’s also really common to make it with shredded cheddar and/or jack cheese, which is more Tex-Mex I guess. I always have that on hand and it melts better.

    we always called these breakfast burritos. a combination of any or all of the following: eggs, sausage/bacon, cheese, salsa, green chiles, roasted red peppers, sauteed mushrooms & onions.

    One of my measures of a good Mexican restaurant here is how late they serve breakfast tacos. Sometimes we make them for dinner because we love them so much!

    This is a staple breakfast in Arizona. We eat them burrito-style and call them “breakfast burritos.” They’re hearty and delicious!

    My boyfriend loves to eat breakfast burritos after he goes surfing early in the morning! (We live in SoCal). The ones you can buy at the hole-in-a-wall Mexican place off the beach are PRETTY unhealthy, but these look nutritious and downright amazing! Now I have something to make for the BF on his surf mornings. :)

    Homemade tortillas are the best! I grew up making them w my grandma and don’t use exact measurements, just going by feel so it’ll be interesting to see how you make yours :)

    we were stationed at fort hood, texas, for 4 years recently and i dream about the breakfast tacos, which they sell everywhere, even at the donut shops! my favorite combo is egg, fried potatoes, and yellow mexican queso. YUM! unfortunately, i’ve not been able to locate the yellow queso since we pcs-ed away from texas, but it’s one of many reasons i can’t wait to go back someday!

    I’ve made breakfast tacos before, but have never actually eaten them. I don’t know… eggs wrapped in a tortilla just somehow doesn’t mesh with my idea of breakfast. I’m trying to break out of that. I also make my own tortillas which I learned from watching a video posted by non other than director Robert Rodriguez(of Spy Kids fame).

    I think not knowing what a breakfast taco is is practically sacrilege in the Southwest, lol.

    I’m from Oklahoma, so I grew up eating these for breakfast.

    They’re so easy and delicious! My mom always made them with scrambled eggs, regular ground breakfast sausage, salsa, and cheese. Heavenly.
    I usually make them with my homemade turkey sausage.
