Chicken Parmesan Burgers

As soon as I read the title of this recipe, my first thought was, “YUM!”.  These were pretty much guaranteed to be a hit in our house.  We love chicken Parmesan and we love burgers, but it never occurred to me to combine the two.  Thanks to Elly for such a phenomenal idea!  These completely lived up to my expectations.  This is a very simple dinner that requires little effort, and I think it is perfect for a weeknight.  I cooked these with the broiler but I’m sure they would be wonderful on the outdoor grill as well.  These will definitely be something I make again and again!

Chicken Parmesan Burgers
Ingredients:
For the burgers:
1 lb. ground chicken
1/4 cup grated Parmesan cheese
1/4 cup bread crumbs
2 tsp. Italian seasoning
3 tbsp. chopped flat leaf parsley
1 clove garlic, minced
1 shallot, finely diced
Salt and pepper

For serving:
Pasta sauce
Mozzarella or provolone cheese (sliced or shredded)
Sautéed mushrooms (optional)
4 hamburger buns

Directions: 
In a medium bowl combine all of the ingredients for the burgers.  Mix well until thoroughly combined.  Form the mixture into 4 patties.  Refrigerate for about 30 minutes to allow the flavors to mingle.

Preheat the broiler.  Spray the broiler pan with cooking spray.  (Alternatively, cook the burgers on an outdoor grill or grill pan.)  Broil the burgers for 4-6 minutes on one side, then flip and broil for 4-6 more minutes on the other side until fully browned and cooked through.  Remove from the oven, top each burger with pasta sauce and cheese.  Place back under the broiler for 30-60 seconds until the cheese is melted.  Top with sautéed mushrooms if desired, and serve on toasted hamburger buns.

    Yum! Anything with cheese and marinara slathered over it is bound to be good. Seems like a nice twist on the traditional burger.

    I made these for my husband and our married friends last night and everyone absolutely loved them. Pretty easy recipe and I think the key is leaving them in the fridge for 1/2 an hour just to firm up. Fantastic recipe and was a HUGE hit last night.

    Just wanted to follow up to say that I grilled these burgers last night & they were AWESOME!! I topped them with diced tomatoes and a slice of provolone, and was thoroughly impressed! I froze two, but think they’ll be coming out of the freezer soon! Thanks for sharing.

    Hi Annie!

    What type of ground chicken did you use, or did you grind the meat yourself? I’ve seen ground chicken at the supermarket but I’m not sure if thats the same thing. At the supermarket today, I asked the butcher to grind some chicken breasts but he said he couldn’t do it b/c of contamination issues or whatever. I really want to make these!

    Hi Lori,
    I just buy the ground chicken at the store (near ground turkey, etc.) I’m not aware of multiple types of ground chicken, short of grinding it yourself (which I don’t do – eww!)

    LOL, I thought I read somewhere (on another nestie’s blog) that its better not to use the ground chicken at the store b/c its not the same thing (or taste) but I guess it was for another recipe. So did you use the perdue ground chicken?

    I *think* it is Perdue brand that I use, but not sure. I just buy whatever they have (only one kind) and it’s find with me. I don’t know, but I wonder if it was Elly’s chicken sausage patties or something where you read that.

    I made these tonight and they were fabulous! Only change I made was to use ground turkey instead of chicken since I had it in the freezer and couldn’t find ground chicken at the store… Fabulous!
