Black Bean and Salsa Soup Cooking View

This recipe has long been one of my favorites. It is incredibly simple, quick, healthy, and delicious – what more can you ask for? I love to make this when I get home from a long, busy day because it is so quick and easy but still tastes great. It is even great as a leftover. I think the garnish really adds something special to this soup, so I wouldn’t recommend skipping it.

Black Bean and Salsa Soup
Yield: about 4 servings

Ingredients

2 cans black beans, drained and rinsed
1½ cups vegetable broth
1 cup salsa
1 tsp. cumin
Salt and pepper, to taste
Sour cream, green onion, shredded cheese for garnishing

Cooking View

Directions

  • Combine beans, broth, salsa and cumin in a food processor.  Blend until fairly smooth.  Season with salt and pepper to taste.  Heat soup in a saucepan over medium heat until thoroughly heated. Put soup in bowls and garnish as desired.

    We made this tonight for dinner— so EASY and QUICK! I made cheese quesadillas for a side. The soup was really good and had a great flavor.

    I added half an onion, sauteed in the pot before adding everything else, just because I had one on hand. I also found it easier to use an emulsion blender than a food processer. Delicious recipe, I’m currently eating it with some corn chips.

    I love this so much, but it’s too bad I can’t get those small globules of black beany goodness from the very bottom of the blender T^T. This soup made my day! So easy, and I can just blend in the morning and heat up in the evening, maybe with some warmed up tortillas. So good for the ol’ pre-Xmas buffet scourge diet– protein, fiber, vitamins, and all that jargon.

    Will gladly trade you for other yum-delicious recipes : }

    Came across your site and am a huge fan! Instead of ogling at all the tasty photos, I actually decided to give one a try, and what a great one to try. I just recently found that I adore black bean soup and as a college student, this is definitely a great way to make a hearty soup minus the time!

    I thought your and/or your readers would like to know that I was able to successfully substitute 2 cans Annie’s organic re-fried black beans. I read the recipe and had to make it NOW so I just made it for lunch for me and my 3 young homeschooling boys with what I had on-hand. It’s a winner.

    To your list of descriptions(quick, simple, healthy) I would add frugal! Kudos!

    I’ve been following your blog since I saw your photos on bobbi+mike. This is the first recipe that I’ve tried so far and I absolutely love it! I’m in pharmacy school (currently on rotation) and am exhausted by the time I get home at the end of the day. This recipe was just what I needed for a quick and healthy meal after rotation. I don’t have a large food processor but I dumped everything into my blender and it worked perfectly. I can’t wait to try more of your recipes! Thanks :)

    That depends on the serving size, which varies a lot from person to person. 3-4 in our house, but it’s tough to say.

    I made this tonight and it was delicious… to answer Margaret’s question, I measured how much it made because I was adding up calories, and the recipe made about 4 cups of soup total. This is super tasty for being low calorie too! Less than 200 calories for a 1 cup serving!! Thanks for sharing this great recipe Annie!! I will definitely make this again!

    Yum! I made this for my boyfriend and neighbor tonight…and we all loved it! I added a chopped clove of garlic and some chili pepper. Also, I didn’t have vegetable broth so I used chicken broth instead. Delicious and so easy! Thanks for the recipe!

    Annie, I just wanted to confirm what size of can of beans you are using. I am thinking it is 14oz, but please let me know. I am in Canada and our sizes are slightly different. I have 2 19oz cans set aside to make these tonight. Not sure if that is too much

    Absolutely delicious! My hubby and I both LOVED it…he was even satisfied post-hockey (in which he comes home starving for dinner!)
    I add a bit of siracha hot sauce and a dash of lime-juice – but it was good without it too.

    Just made this–very yummy! I used a mix of half red and half green salsa (due to a shortage) and licked it–had a nice kick! Our topping choices were crumbled cornbread, bacon, sour cream, green onion, and cheese.
